GRINDING X SHARPENING

There is a significant difference between grinding and sharpening, because when grinding we give the blade the desired shape, when sharpening, on the contrary, we straighten the blade and strengthen it.

BLADE ANGLE

The lower the angle of the blade, the sharper it is, but at the same time it is more prone to blunting, what means that we grind at a greater angle for knives, machetes or cleavers, because we treat them more roughly. On the contrary, kitchen knives have a lower angle.

SHARPENER SELECTION

The most suitablesharpeners are synthetic ones made of silicon carbide. These whetstones are double-sided, have a different grain size on each side and can be also used to sharpen blades made of high-quality steel.

HOW TO PROCEED FOR FREE HAND GRINDING?

The whetstone must be constantly wet, we moisten it with water or vegetable oil. Place the blade with the edge at the right angle on one end of the whetstone and pull it evenly slightly to the right against the blade. It is necessary to keep the correct angle as well as the number of strokes on each side. After grinding, a relatively rough surface remains, the same procedure must be smoothed on the finer side of the grinder. After grinding, drip the oil on a grinder and wipe off the steel sawdust created by grinding.
