Tactical Foodpack freeze-dried cheese is a ready-to-eat snack without the need to process the food any further. The process of freeze-drying takes place under low temperature and pressure. It is a gentle removal of water from the food and thus does not significantly damage its texture, taste or nutritional value.
The freeze-drying process has three stages - freezing, primary drying and secondary drying. During this process, the food loses up to 95-99% of its water.
Freezing - first the food is cut into small pieces and then quickly frozen at about -50°C. The purpose is to freeze the water in the food into ice without forming large ice crystals.
Primary drying - after thorough freezing, the pressure is reduced to vacuum level. At low pressure and gradually increasing temperature, sublimation occurs (ice turns to steam)
Secondary drying - this is the final part of the drying process and removes the remaining bound water after sublimation. This phase is very slow and involves an increase in temperature corresponding to the ambient environment.
The main advantages of freeze-drying are long shelf life, low weight due to the removal of water and the preservation of nutritional values without loss of natural flavour.
